Directions

  1. Put olive oil in the frying pan and let it burn for a couple of minutes.
  2. Cut the pepper in small pieces and fry it.
  3. If using fresh tomatoes chop them as fine as possible and add them.
  4. Fry until the mixture becomes almost dry.
  5. Add salt, pepper and the eggs smashed inside the frying pan.
  6. With a wooden spoon stir for a few minutes.
  7. Remove the mixture and serve warm.
You can also use onions and even sausages.

  • 3 eggs
  • 3 fresh tomatoes (alternatively, a can of finely chopped tomatoes)
  • olive oil
  • 1/2 green pepper
  • salt
  • pepper
